  I'll keep the wind in mind, as I'm a painter, I don't want to end up with a bunch of kites.

  I did this show 2 years ago. It is set up on the large commons area of Sheridan College as a large circle. Set up and load out was very easy. Quality of work was good considering a smallish town, close to trout fishing in mountains just west of town. Word of caution...weight and stake your canopy and set your work on the ground (3 dimen work) as the wind can blow very hard. Sales were Ok Sat, storm Sat nite and slow to start on Sunday. Nice folks and well run show.
