What are the best things about art fairs
Having only the one show experience, and that not really an art fair, I have to answer from the perspective of a buyer -- which I am far too often!

I love craft and art fairs both. I love talking to artists, hearing their philosophy of beauty, what inspires their art, and at some festivals, the fooood. (Think Rennfaire!)
Best show ever and why
Since I live within some 15 minutes of Dulles Expo Center, my usual answer would be "the most recent show I attended!"
Worst show ever and why
Until recently, I've been a buyer rather than an artist selling, I can't say as I've ever had a "worst" show. They are all fulfilling or I have learned something.
