I was demonstrating throwing and a bystander wanted a cup. She said "I'll pick it up tomorrow." when I explained that was not possible I didn't get the sale.

LOL. I don't think people get it all the time. I had a customer who special ordered some earrings for his wife's birthday at 4 p.m. on a Sunday.
"When can I get them?" he asked.
"When do you NEED them?" I responded, thinking about an evening spent with a nice cool drink and a/c after spending art show weekend outdoors in 100+ temps.
"Tomorrow. Her birthday is tomorrow."
I laughed, said "That ain't happenin'" and gave him the earliest date I could get them to him.
Fortunately he understood and I gave him one of my business cards with an "IOU" on it wrapped in a box to give her.

You're right, its a good idea to have gift certificates in these situations - saved the sale for me a couple of times :)
