It seems to me that the transition might be easier if you were less ambitious. I suggest you apply to a small number of shows that are spaced out in time, and that do not share dates with the shows that make you money. Make enough inventory for one or two shows. Once you are exhibiting, you will see how good a response you get, and how hard it will be to replenish. Worst case you can come to your last show with inadequate inventory and take orders. Actual experience will be more useful to you in planning your next year than most of the good advice you are getting here.
